Sugar Cookie Ice Cream Sandwiches

Ingredients:

• 1 box Loretta Sugar Cookie Mix
  
• Ingredients called for on the box (Eggs & Butter)
  
• Your favorite ice cream flavor
  
• Optional: Sprinkles, mini chocolate chips, or crushed nuts for rolling

Instructions:

1. Prepare the sugar cookie dough according to the package directions.
   
2. Scoop dough onto a baking sheet lined with parchment paper, forming small, flat rounds about 3 inches wide.
   
3. Bake cookies as directed until golden brown and let cool completely.
   
4. Once cool, place a scoop of ice cream on the flat side of one cookie. Top with another cookie to make a sandwich.
   
5. Optional: Roll the edges of the ice cream sandwich in sprinkles, mini chocolate chips, or crushed nuts for extra fun and flavor.
   
6. Freeze the sandwiches for at least 1 hour before serving so they hold together well.
